I hope you all had a wonderful Christmas time! 🙂 I certainly did.
I would love to share with you my easy and quick recipe for a delicious dinner for two (or more with just adding more cucumbers and sweet potatoes) :).
Ingredients (for 2 people):
- 1 whole chicken
- 1 large sweet potato
- 1 cucumber
- 1 tbsp of barbecue sauce
- 1 tbsp of maple syrup
- 1 tbsp of butter
- 1 tbsp of greek yogurt or sour cream
- 1 tsp of dry dill
After washing the chicken put it in an air fryer (I use Hamilton Beach air fryer). I set the temperature for 400 degrees Fahrenheit and put the chicken for about 30-40 minutes.
In the meantime, cut cucumber in half and grate it. Mix it with sour cream and dry dill.
Next, cut potatoes into cubes and put them to boil into pot with hot water. Once they’re soft, drain them and add butter, maple syrup and smash it all.
When the chicken is done, cut your favorite pieces, add cucumber salad, smashed sweet potatoes and enjoy! 🙂
